It’s that time of year again. A time to start fresh and try to get back into a routine. There are times when it’s exhausting trying to figure out lunch ideas. My kids don’t really like sandwiches or soup so I find myself looking for creative ideas.
I found a recipe for pizza muffins so I clipped it out of a magazine (Canadian Living) to try. They were a hit and thought I would pass them along! They freeze well and are easy to pack in a lunch box.
Fast, Easy and yummy!

Pizza Muffins
2 cups flour
1/4 cup granulated sugar
1tsp of basil and salt (each)
1tsp baking powder
1/2 tsp baking soda
1 cup cubed old cheddar cheese
1 cup plain yogurt
2 eggs
1/4 cup melted butter
1/2 cup of red or green peppers
1/4 cup pizza sauce
1/2 cup shredded mozzarella
Mix all dry ingredients together. In a separate bowl mix butter, eggs, yogurt then add to dry mixture
(Change flour to whole wheat flour, spelt flour or any other whole grain flour as an option – you can also use low fat cheese and yogurt)
(add other veggies or pepperoni to really capture the pizza taste!)
Bake at 400 for 20 minutes – delicious!
